年夜饭

马上就要吃元宵了,吃完了元宵,新年也就算完了,趁着还在年里头,把我们的年夜饭端给大家看看,小心口水别留到盘子里啊!

今年的年三十刚好是周末,源是打了一天的工, 我没邀三请四的来家过年,可年还是年,不过得轰轰烈烈,也要过越得温情脉脉,让心和嘴得个满足! 

东北过年必吃饺子,JC的老家过年时要备一桌酒菜,且必有鱼,源的味觉已被培养地对西餐更有感觉,所以我们的年夜饭是中西合璧,南北结合。

年年有鱼是老传统,从去年,我又创造新传统---“年年糕”,今年的我烤红豆年糕,软糯可口,香甜适宜

作法及其简单, 基本是文学城毛毛妈的方子http://blog.wenxuecity.com/blogview.php?date=200801&postID=44523,略作改动

用料:
1:糯米粉一包(454克),糖3/4杯,泡打粉(Baking Powder)1茶匙。
2:红豆沙1.5杯。(我是买的一袋“王致和”红豆锨,500g)
3:鸡蛋两只,玉米油1/4杯,牛奶1又3/4杯,炼乳(Condensed milk)4大匙 (我用的heavy cream)。
做法:
红豆沙:红豆沙可用买来的成品,我喜欢自己做。锅内放入3.5杯水和洗净的红豆300克至炉上,开大火煮至滚。开小火煮一个半小时至水干,加糖3/4杯拌匀离火。再用勺把红豆压压碎备用。多余的红豆沙可放冰柜存储。

年糕:取一大盆放入1料拌匀。另取一盆,鸡蛋两只打散后,加牛奶,炼乳,玉米油搅拌均匀。然后将湿料到入盛1料的大盆里,搅拌均匀至无颗粒。接着加入2料拌匀,然后倒入22×32厘米的涂了少许玉米油的玻璃烤盘中。将烤盘放入预热至350F的烤箱内,烤40分钟,调到Broil档再烤2分钟(用低档或省了这步,没看我的年糕是屁股朝上嘛,只因脸给烤毁容了),至表面均匀上色即可。待烤好的年糕,凉20分钟后,盖上保鲜纸继续冷凉2小时,再切块食用。这是关键一定要盖上保鲜纸冷凉,这样年糕才不会表面和底部干硬,保持年糕软糯可口。切块的年糕放入密闭塑料盒里,室温保存,两三天内都是软的。

 

JC 的菜多是老几样:红烧肉,椒盐虾,粉蒸肉,红烧三文鱼,都是我和源的最爱,今年,JC 决定向西餐挑战,所以中国的年夜饭里有了道意大利菜---chicken marsala  http://www.italianchef.com/marsala.html

看上去不creamy 可酒味很浓,与意大利厨子搞的不相上下,至少虎弄我和儿子没问题,当晚唯一被消灭光的菜!

 

“Chicken Marsala

Serves 2 

2 chicken breasts, pounded thin
flour, spread on a plate
1/4 cup olive oil
1/2 pound of mushrooms
1/2 cup Marsala wine
2 tablespoons of butter
1/2 cup chicken broth
Salt and Pepper to taste

1. Heat olive oil in large saute pan over medium-high heat.

2. When the oil is hot, dredge both sides of the chicken breasts in flour, shake off excess flour and place in pan. Saute chicken, turning once, until lightly browned on both sides. Transfer the chicken to a warm plate.

3. Drain all but a little bit of the oil and add mushrooms. Saute the mushrooms until they begin to release their juices.

4. Add the Marsala wine, and scrape loose with a wooden spoon all browning residues on the bottom and sides of the pan.

5. Add butter, chicken broth, salt and pepper. Cook until the liquid is reduced by half, approximately 5 minutes.

6. Place the chicken breasts back in the pan and cook until heated through. Transfer the chicken breasts to warm serving plates, pour sauce over them and serve.”

本想烤点东西带到单位,初一与大家分享的,可一懒,就摔着两膀子,去上班了。 可同事沙拉(Sahra)早晨一见我就说:“恭喜发财”我愣了一下儿,反映出她的祝福,略作纠正,就打发她去别的中国同事那了,给他们点喜气!
